beef and cheddar and potato pie

would like to add more vegetables next time

2 pds ground meat
2 carrots, cut into 1/4 inch cubes
1 large onion cut into 1/4 inch cubes
1 stalks celery or a table of celery salt
1 large clove garlic chopped
1 large baking potato peeled and into cubes
1/2 cup dark beer
8 oz sharp cheddar cheese shredded
salt and pepper
2 sheets frozen puff pastry thawed but cold
1 large egg yolk beaten with 1 table water

preheat oven to 375; in skillet combine beef, carrots, onion, celery, garlic, potato and cook over med high until 15 mins; lower heat to med and add beer and cook 10 mins; add cheese salt and pepper; cool; press one sheet of pastry into pie pan; transfer meat to the pie with slotted spoon; brush edge of crust with egg wash and press top pastry on top; seal cut x in top; sprinkle salt and pepper and egg wash top; bake 45 mins

creamed chicken and dumplings

med size can of biscuits plain cut up
4 table butter
1 onion chopped
1 red bell pepper chopped
12 oz skinless, boneless chicken breast in thin strips or chunks
salt and pepper
2 table flour
1 cup half and half
2 cups chicken broth
1 chopped scallions

heat 2 table butter over medium high heat; add onion and bell pepper and cook stirring often until soft for 5 mins; add chicken and cook stirring occassionally until just cooked for 5 mins; season with salt and pepper; in small saucepan melt 2 table butter over med heat; whisk in flour and cook until toasted for 3 mins; whisk in half and half and chicken broth; boil and drop in biscuits; lower heat and simmer until thickened then add chicken mixture; season and top with scallions

bacon and tomato creamy mac n' cheese

Made this with bacon, but would like to try with smoked sausage or kielbasa

1 pd pasta
EVOO
6 slices bacon chopped
2 large cloves of garlic chopped
1/2 tea crushed red pepper
3 table tomato paste
1 package of cream cheese cut into pieces
1.5 cups shredded white cheese combo
.5 pint cherry tomatoes quartered

preheat oven to 500; cook pasta and keep 1 cup of water; in large skillet heat EVOO over med high heat; add bacon and cook until crisp for 3-5 mins; add garlic and pepper and cook for 1 min; stir in tomato paste for 1 min; stir in cream cheese until melted; stir in half shredded cheese and water; add pasta to the sauce and toss; put in casserole and top with tomatoes and remaining cheese; bake 7-8 mins

three cheese skillet lasagna

43 oz canned crushed tomatoes (28oz can and 15 oz can)
3 chopped garlic cloves
3 tablespoons EVOO
salt and pepper
1 large egg yolk
1.5 cups part-skim ricotta cheese
1 box (12 oz) no boil lasagna noodles
half pd mozz shredded
1/4 cup grated parmesan cheese
 
preheat oven to 400; in large deep skillet bring omatoes, garlic, and oil to boil; reduce to simmer and cook med until thick about 12 mins; in med bowl mix egg yolk, ricotta, and 1/2 tea salt and pepper; pour sauce into heatproof bowl and return 3/4 cup to skillet; add layer of noodles, top with ricotta mixture, another layer of noodles, marina, third layer of noodles, remaining ricotta mixture, and final layer of noodles - top with cheese
bake 30-35 mins

Cherry Tomato and Ravioli soup

2 table EVOO
2 pints cherry tomatoes
2 cloves garlic crushed or chopped
salt and pepper
32 oz chicken stock (4 cups)
1 pd fresh cheese ravioli
1 cup basil leaves
2 scallions white and green separate

in large deep skillet w/lid heat EVOO over medium high heat; stir in tomatoes and garlic; season w/salt and pepper; cover and cooking 7-8 mins for tomatoes to burst; add stock and 2 cups water; boil; add ravioli and cook until tender for 3 or 4 mins; remove from heat and add basil and scallions; add cheese on top if desired
